Broccoli Soup (Soup-e Broccoli)

Instructions
Step 1: In a pot over medium heat, melt 2 tablespoons of butter and add the chopped onion. Sauté for 5 minutes until the onion softens.
Step 2: Add the chicken broth and diced potatoes to the pot and bring to a boil. Reduce heat to low and let simmer for 10 minutes.
Step 3: Add the chopped broccoli to the pot and continue cooking for another 10 minutes.
Step 4: Meanwhile, cut the bread into smaller pieces. Heat the butter and cooking oil with the minced garlic in a pan and fry the bread pieces until golden.
Step 5: Purée the soup with an immersion blender or in a blender until smooth. Return the soup to the pot, season with salt and pepper to taste, and keep warm.
Step 6: Serve the warmed soup in bowls and garnish with the toasted bread pieces.
