Instructions
Place a clean, four-compartment appetizer tray on a flat serving surface.
In the first compartment, arrange the cucumber slices neatly and lightly drizzle with mayonnaise for a creamy contrast.
In the opposite compartment, fan out the hard-boiled egg slices and top with a small spoonful of mayonnaise.
In the third compartment, layer the tomato slices. Drizzle with olive oil and vinegar, scatter the sliced mushrooms over the top, then finish with another light drizzle of oil and vinegar. Season lightly with salt and pepper if desired.
In the fourth compartment, arrange the fried eggplant slices and garnish generously with chopped parsley.
If your tray includes a center (or fifth) compartment, prepare a simple mixed salad: combine the cooked rice, chopped green pepper, chopped celery, walnut halves, olive oil, vinegar, salt, and black pepper. Add the chopped boiled potatoes if using, and toss gently until evenly coated.
Serve immediately, or refrigerate briefly to chill before serving. This platter comfortably serves 4 to 6 people.
