Cut the whole chicken into 8 even pieces, keeping the skin on to ensure juicy meat and a crisp exterior.
In a large bowl, combine the lemon juice with half of the fried chicken seasoning. Add the chicken pieces and massage well so they are evenly coated.
Cover and refrigerate for 1 hour to allow the seasoning to penetrate the meat.
Mix the remaining fried chicken seasoning thoroughly into the breadcrumbs and set aside.
Remove the chicken from the refrigerator. Lightly coat each piece in wheat flour, shaking off any excess.
Briefly dip the floured chicken pieces into ice water, then let the excess drip off. This step helps create a crunchier crust.
Roll each piece generously in the seasoned breadcrumbs, pressing gently so the coating adheres well.
Heat about 1.5 cups of vegetable oil in a pressure cooker over medium-high heat until hot but not smoking.
Carefully place the chicken pieces into the hot oil. Cover and cook for about 5 minutes, until the underside is golden and crisp.
Open the lid, turn the chicken pieces, cover again, and cook for another 5 minutes until fully cooked through and evenly browned.
Remove the chicken from the oil and let it rest for a few minutes before serving. Serve hot, traditionally with ketchup.
