Beef Burger Cutlets with Homemade Baguette Crumbs

Instructions
Spread the baguette interior in a dry, well-ventilated place and let it air-dry completely. Once fully dry, grind or crumble into fine crumbs; you should have about 4 cups.
In a large bowl, combine the baguette crumbs, egg yolk, lemon juice, mustard, black pepper, thyme, and celery seed. Mix until evenly moistened.
Add the ground beef, parsley, onion, and both bell peppers. Gently fold until just combined, taking care not to overmix.
Divide and shape the mixture into evenly sized cutlets.
Heat the olive oil in a wide skillet over medium heat. Cook the cutlets, turning once, until golden brown on both sides and cooked through.
In a small bowl, mix the mayonnaise with a squeeze of lemon juice, salt, and black pepper to taste.
Serve the cutlets hot, topped with a spoonful of the lemony mayonnaise. Enjoy with baguette if desired.
