Bunless Stuffed Beef Burger with Parmesan & Roasted Pepper

Instructions
In a large bowl, gently combine the ground beef and ground smoked sausage using your hands. Mix only until just blended to keep the burgers tender.
Divide the meat mixture into 12 equal portions. Place each portion on parchment paper and flatten into patties about 10 cm wide and 1.5 cm thick.
On six patties, evenly distribute the Parmesan pieces and roasted red bell pepper. Top each with a remaining plain patty and press the edges together firmly to seal, forming stuffed burgers.
Season the outside of each burger generously with salt and pepper on both sides.
Prepare a charcoal grill with hot, evenly distributed coals, or preheat a gas grill to medium heat. Grill the burgers for 15–18 minutes, turning occasionally, until well browned and fully cooked through.
To serve, wrap each burger in fresh lettuce leaves. Garnish with a cherry tomato secured with a toothpick and serve immediately.
