Cut the chicken breast into evenly sized, bite-sized nuggets to promote even cooking.
In a medium bowl, whisk together the buttermilk and hot sauce. Add the chicken, ensuring all pieces are fully coated. Cover and refrigerate for at least 30 minutes to tenderize and flavor the meat.
In a separate bowl, combine the flour, paprika, cayenne pepper, garlic powder, salt, and black pepper. Mix thoroughly so the spices are evenly distributed.
Heat vegetable oil in a deep skillet or heavy-bottomed pan to 180°C (350°F). The oil is ready when a pinch of flour sizzles immediately.
Remove the chicken from the marinade, letting excess buttermilk drip off. Dredge each piece thoroughly in the seasoned flour, pressing gently so the coating adheres.
Fry the chicken in batches, carefully lowering pieces into the hot oil without overcrowding the pan. Cook for 3–4 minutes per side, until golden brown and cooked through.
Transfer the fried nuggets to a paper towel–lined plate to drain excess oil. Serve hot for best texture and flavor.
