Chilled Indian-Inspired Coconut Curry Soup

Instructions
Melt the butter in a saucepan over medium heat. Add the chopped onions and sauté until soft and lightly golden, about 5–7 minutes.
Add the garlic, curry powder, and flour. Stir continuously for 2–3 minutes until the mixture is smooth and fragrant, cooking out the raw flour taste.
Gradually pour in the chicken broth while stirring to prevent lumps. Bring the soup to a gentle boil.
Add the tomatoes, apple, coconut, and lemon juice. Reduce the heat, cover, and simmer gently until all the ingredients are very tender.
Remove from heat and strain the soup until completely smooth, pressing lightly on the solids to extract maximum flavor.
Allow the soup to cool to room temperature, then refrigerate until thoroughly chilled.
Serve cold, finishing each bowl with a light pour of cream just before serving.
