Chilled Tuna & Sweet Corn Tea Canapés

Instructions
Bring a small pot of water to a gentle boil. Add the drained canned tuna and simmer for about 20 minutes to soften it and reduce excess salt. Drain thoroughly and let cool slightly.
Heat a small skillet over medium heat with a drizzle of olive oil. Lightly sauté the tuna for 2–3 minutes to enhance flavor, then remove from heat and allow to cool completely.
In a mixing bowl, combine the cooled tuna with sweet corn and mayonnaise. Season with salt, black pepper, and a squeeze of fresh lemon juice. Mix gently until well combined.
Cover the bowl and refrigerate for about 30 minutes to allow the flavors to meld.
If desired, trim the crusts from the bread slices, then cut them into neat rectangles suitable for canapés.
Place a lettuce leaf on one piece of bread, spoon an even layer of the tuna–corn mixture on top, and cover with another piece of bread.
Arrange the canapés on a serving plate, garnish with halved cherry tomatoes, and serve chilled or at cool room temperature.
