Citrus-Ginger Beef Skewer Kebab (Kebab Choobi)

Instructions
In a food processor or blender, combine the crushed peppercorns, garlic, ginger, orange zest, spring onions, and red pepper. Pulse briefly until well mixed but still slightly textured.
Transfer the mixture to a deep bowl. Stir in the honey, soy sauce, vegetable oil, and sesame oil until fully emulsified. Season with salt and black pepper.
Cut the beef fillet into 16 evenly sized cubes. Add the beef to the marinade, tossing gently to coat each piece. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate.
Soak the wooden skewers in water for 30 minutes to prevent burning during grilling.
Thread the skewers by alternating a cherry tomato, a bay leaf, a piece of marinated beef, and a mushroom. Repeat until each skewer is evenly filled.
Preheat a barbecue, electric grill, or cast-iron grill pan over medium-high heat. Grill the skewers, turning every 1–2 minutes, until the beef is nicely browned and cooked to your desired doneness. Brush lightly with extra marinade during grilling for added moisture.
Remove from the grill and let rest for 2–3 minutes before serving.
