Instructions
If starting with whole chicken breasts, trim away any bones or excess fat and cut the meat into evenly sized cubes to ensure uniform cooking.
In a large bowl, combine the grated onion, yogurt, brewed saffron, lemon juice, olive oil, salt, and black pepper. Mix well until the marinade is smooth and evenly blended.
Add the chicken cubes to the bowl and gently toss until all pieces are thoroughly coated. Cover and refrigerate overnight to allow the flavors to deeply penetrate the meat.
Preheat a grill to medium, steady heat. Thread the marinated chicken pieces onto skewers, leaving a small gap between pieces for even heat circulation.
Grill the skewers, turning occasionally, until the chicken is fully cooked, tender, and lightly charred on the edges. Brush with melted butter while grilling to keep the meat moist and enhance flavor.
