Crack the eggs into a bowl, add the milk, salt, and pepper, and whisk gently until smooth and lightly frothy without incorporating too much air.
Heat a non-stick skillet over medium heat and add the butter. Allow it to melt completely, swirling the pan so the butter coats the surface evenly.
Pour the egg mixture into the pan. Let it cook undisturbed for about 1–2 minutes, until the bottom sets and the edges begin to pull away slightly.
If using vegetables or herbs, sprinkle them evenly over the omelette while the top is still slightly soft.
When the center is just set but still tender, gently fold the omelette in half using a spatula.
