Heat a non-stick skillet over medium heat and add the butter or oil, allowing it to melt and evenly coat the pan.
Crack the eggs into a bowl and whisk vigorously until pale and slightly foamy. Season with salt and black pepper, then whisk in the milk until fully combined.
Pour the egg mixture into the hot pan, gently tilting the skillet so the eggs spread evenly across the surface. Reduce the heat to medium-low.
Cover the pan and cook for about 1 minute, until the omelet is just set but still soft and tender on top.
Arrange the ham or cold cuts lengthwise across the center of the omelet. If using cheese, sprinkle it over the meat while the eggs are still warm.
