Classic Mexican Sopes with Refried Beans and Queso Fresco

Instructions
In a large mixing bowl, combine the masa harina and salt. Gradually add the warm water, mixing with your hands until a soft, smooth dough forms. The dough should be pliable and not stick to your fingers.
Divide the dough into 8 equal portions and roll each portion into a smooth ball.
Gently flatten each ball into a thick disk about 1/2 inch thick, keeping the edges even so the sopes cook uniformly.
Heat a thin layer of vegetable oil in a wide skillet over medium heat until shimmering.
Cook the masa disks for 1–2 minutes per side, turning once, until lightly golden on the outside while still tender in the center.
While the disks are still warm and flexible, carefully pinch the edges between your fingers to create a raised border that will hold the toppings.
Spread a generous layer of warm refried beans over each sope.
Top with shredded lettuce, crumbled queso fresco, and your choice of red or green salsa.
Finish with a drizzle of sour cream and serve immediately while warm.
