Classic Persian Beef and Onion Stew (Khorak Goosht va Piaz)

Instructions
Rinse the beef under cold water, pat dry thoroughly, and cut into uniform bite-size cubes to ensure even cooking.
Heat the vegetable oil in a large, heavy-bottomed pot over medium heat.
Add the beef cubes and brown them for about 5 minutes, stirring occasionally, until lightly golden on all sides. This step builds depth of flavor.
Add the sliced onions and minced garlic to the pot. Sauté for 8–10 minutes, stirring frequently, until the onions soften and begin to turn golden and fragrant.
Sprinkle in the turmeric, salt, and black pepper. Stir well so the meat and onions are evenly coated with the spices.
Pour in the water and bring the stew to a gentle boil.
Reduce the heat to low, cover the pot, and let the stew simmer for about 90 minutes, stirring occasionally, until the beef is very tender and the sauce is rich.
Taste and adjust seasoning if needed. Serve hot, garnished with freshly chopped parsley.
