Classic Skillet Chicken or Beef Quesadillas

Instructions
Heat the vegetable oil in a large skillet over medium heat until shimmering.
Add the diced onion and peppers and sauté for 3–4 minutes, stirring occasionally, until softened and fragrant. Season lightly with salt.
If using meat, stir in the cooked shredded chicken or beef and cook for 1–2 minutes, just until warmed through. Transfer the mixture to a bowl and set aside.
Wipe the skillet lightly if needed, then place one tortilla flat in the pan over medium heat.
Sprinkle shredded cheese evenly over one half of the tortilla, then spoon a portion of the sautéed filling over the cheese.
Fold the tortilla in half to enclose the filling and cook for 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden and crisp and the cheese is fully melted.
Transfer to a cutting board and repeat with the remaining tortillas and filling.
Slice into wedges, garnish with fresh cilantro, and serve warm with sour cream and salsa on the side.
