Classic Swiss Rösti Potato Pancake

Instructions
Place the grated cooked potatoes in a large bowl. Add the finely chopped onion, salt, black pepper, and a light pinch of freshly grated nutmeg. Gently mix until evenly combined, taking care not to mash the potatoes.
Heat the vegetable oil in a wide non-stick or cast-iron skillet over medium heat until shimmering.
Add the potato mixture to the pan and press it down evenly with a spatula to form a compact pancake, smoothing the surface and edges.
Cook undisturbed for 5–7 minutes, allowing a deep golden crust to form on the underside.
Carefully slide the Rösti onto a large plate or lid. Invert it back into the pan to cook the other side.
Cook for another 5–6 minutes. Add the butter toward the end, letting it melt and baste the Rösti for extra richness and color.
Once both sides are crisp and golden, transfer to a serving plate and serve hot, ideally alongside a fresh seasonal salad.
