Creamy Chicken and Broccoli Soup

Instructions
Heat a large pot over medium heat and add the olive oil. Sauté the chopped onion for about 4–5 minutes until soft and translucent, then add the minced garlic and cook for 30 seconds until fragrant.
Add the diced chicken breast to the pot. Cook, stirring occasionally, until the chicken turns opaque and is lightly cooked on all sides.
Pour in the chicken broth and bring the soup to a gentle boil, scraping the bottom of the pot to release any flavorful bits.
Add the broccoli florets, reduce the heat to a simmer, and cook for about 15 minutes, or until the broccoli is tender but still vibrant.
Stir in the heavy cream, salt, black pepper, and lemon juice. Let the soup simmer gently for another 5 minutes to allow the flavors to meld.
Remove from heat and stir in the chopped parsley. Taste and adjust seasoning if needed, then serve warm.
