Season the chicken breasts evenly with salt and black pepper. Heat a pan over low to medium heat with a little olive oil, add the sliced onions, and lay the chicken on top. Cook gently, turning once, until the chicken is fully cooked through, tender, and lightly golden. Remove from the pan and keep warm.
In a separate pan, heat olive oil over medium heat. Add the chopped onion and sauté slowly until soft and translucent, avoiding browning for a smooth sauce base.
Add the minced garlic and cook briefly until fragrant. Stir in the fresh spinach and cook until completely wilted and excess moisture has evaporated.
