Creamy Potato Cheddar Soup

Instructions
Melt the butter in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, until soft and translucent.
Add the minced garlic and cook for about 30 seconds, stirring constantly, just until fragrant.
Add the diced potatoes and water. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, or until the potatoes are very tender.
Using a potato masher or immersion blender, mash the potatoes directly in the pot until mostly smooth, leaving a little texture if desired.
Stir in the milk and season with salt. Return the soup to a gentle boil, stirring occasionally.
Lower the heat and gradually add the grated cheddar cheese, stirring constantly until completely melted and the soup becomes creamy and smooth.
Taste and adjust seasoning if needed. Serve hot, ladled into bowls.
