Four Seasons Pizza (Persian Chahar Fasl Style)

Lightly flour a clean work surface. Divide the pizza dough into two equal portions and roll each into a 25 cm (10-inch) round. Transfer to a lightly greased baking tray and gently fold the edges to form a slightly thicker crust. Let rest in a warm spot while preparing the toppings.
Preheat the oven to 200°C (400°F). Ensure the shrimp and artichokes are well drained. Prepare all toppings: slice the mushrooms, thinly slice the beef, grate the cheese, and halve the kilka or anchovies.
To peel the tomatoes, pour boiling water over them for 30 seconds, then transfer to cold water. Peel, finely chop, and mix with salt and thyme.
Visually divide each pizza base into four equal sections. Top one quarter with shrimp and artichokes, the second with mushrooms and beef, the third with cheese and fish, and the final quarter with the seasoned tomatoes.
Drizzle olive oil evenly over the pizzas. Bake for about 35 minutes, rotating the tray halfway through, until the crust is golden and crisp and the toppings are cooked through.
Remove from the oven, garnish with fresh basil, savory, and parsley. Slice and serve warm.
