Instructions
Place the ground chicken in the freezer for 15–20 minutes until slightly firm but not frozen. This step helps create a smoother, more cohesive texture.
Transfer the chilled chicken to a large mixing bowl. Add the onion, red and green bell peppers, pistachios, almonds, eggs, salt, pepper, and spices. Mix thoroughly until the mixture is evenly combined.
Lay out two large sheets of aluminum foil and lightly brush them with oil. Spoon the chicken mixture onto the center and shape it into a compact log.
Roll the foil tightly around the chicken, twisting the ends firmly to seal and form a sausage-like roll.
Bring a large pot of water to a gentle boil. Carefully lower the wrapped roll into the water, ensuring it is fully submerged.
Simmer gently for about 45 minutes, maintaining a steady boil without vigorous bubbling.
Remove the roll from the water and allow it to cool completely at room temperature. Refrigerate until fully chilled, then unwrap, slice neatly, and serve.
