Golden Beef Schnitzel Stuffed with Gouda

Instructions
Arrange the beef slices on a clean work surface and season both sides lightly with salt and black pepper.
Place a slice of Gouda cheese on one piece of beef and top with another slice, pressing gently around the edges to create a sealed beef-and-cheese sandwich.
Prepare a breading station: add flour to one shallow dish, beat the eggs with a pinch of salt and pepper in a second dish, and place breadcrumbs in a third dish.
Coat each schnitzel by dredging it in flour, dipping it into the beaten eggs, and then covering it evenly with breadcrumbs. Gently shake off any excess.
Heat a generous layer of vegetable oil in a wide frying pan over medium heat until hot but not smoking.
Fry the schnitzels for 3–4 minutes per side, until golden brown, crispy, and cooked through with melted cheese inside.
Transfer the schnitzels to a plate lined with paper towels to remove excess oil.
Serve immediately with fresh lemon wedges for squeezing over the top.
