Greek Rustic Cabbage Soup (Soop Kalom Yonani)

Instructions
Heat the olive oil in a large, heavy-bottomed pot over medium heat. Add the chopped onions and sauté for about 5 minutes, stirring occasionally, until soft and translucent without browning.
Pour in the water and increase the heat. Bring the pot to a gentle boil, allowing the onions to release their sweetness into the broth.
Add the tomatoes, chopped cabbage, salt, and black pepper. Stir thoroughly so all ingredients are evenly combined.
Once the soup returns to a boil, reduce the heat to low. Partially cover the pot and let the soup simmer gently for about 1½ hours, until the cabbage is very tender and the flavors are fully developed.
Taste the soup and adjust seasoning if necessary. Serve hot, garnished with freshly chopped parsley.
