Greek-Style Braised Cauliflower in Tomato Sauce

Instructions
Wash the cauliflower thoroughly and cut it into evenly sized florets to ensure uniform cooking.
Heat the oil in a wide skillet or sauté pan over medium heat. Add the diced onion and cook for 5–7 minutes, stirring occasionally, until soft and lightly golden.
Add the minced garlic and cook for about 30 seconds, just until fragrant.
Stir in the tomato puree, salt, and black pepper. Lower the heat and let the sauce simmer gently for 10 minutes, allowing the flavors to meld.
Add the cauliflower florets to the pan, gently turning them so they are evenly coated with the tomato sauce.
Cover the skillet and cook over low heat for about 20 minutes, stirring once or twice, until the cauliflower is tender but still holds its shape.
Sprinkle with chopped parsley, gently mix, and remove from heat. Serve warm.
