Ham or Fish Pan Pizza with Tomatoes & Mozzarella

Instructions
Preheat the oven to 350°F (175°C). Lightly grease a round, shallow baking dish or pizza pan.
Roll out the pizza dough to about ½ cm thickness. Fit it into the prepared pan, covering the base and slightly climbing the sides. Press the edges gently with a fork and prick the center a few times to prevent bubbling.
Bring a pot of water to a boil. Lightly score the tomatoes, pour boiling water over them, then peel off the skins. Halve the tomatoes, remove the seeds, and dice the flesh.
In a bowl, combine the chopped ham or fish with the caramelized onions and a pinch of salt.
Spread the ham or fish mixture evenly over the prepared dough. Scatter the diced tomatoes on top, then finish with an even layer of grated mozzarella.
Place the pan on the bottom rack of the oven and bake for 20 minutes. Move it to the top rack and continue baking for another 15–20 minutes, until the cheese is fully melted and the top is golden.
Remove from the oven and let rest for a few minutes before slicing. Serve warm, straight from the pan.
