Hearty Bean & Ground Meat Pizza with Zucchini Cream
"Elevate your pizza night with this bold Tex-Mex fusion featuring savory ground meat, protein-packed beans, and a surprisingly elegant zucchini cream finish."
Instructions
Preheat the oven to 220°C / 425°F and line a baking sheet with parchment paper.
Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and ground meat, cooking until the meat is fully browned and the onion is soft and fragrant.
Stir in the tomato sauce and dried thyme. Let the mixture simmer uncovered for 3–5 minutes, allowing excess moisture to evaporate and flavors to deepen.
Remove the pan from heat and fold in the crushed tortilla chips, red beans, and corn. Mix until evenly combined.
Place the pizza crusts on the prepared baking sheet. Divide and spread the meat and bean mixture evenly over each crust.
Sprinkle mozzarella cheese generously over the top. Bake for about 15 minutes, or until the crusts are crisp and the cheese is melted and lightly golden.
While the pizzas bake, blend the chopped onion and zucchinis until smooth. Transfer to a bowl and mix with lemon juice and 2 tablespoons of thick cream.
Remove the pizzas from the oven. Spoon the zucchini-onion cream over the hot pizzas and finish with a light drizzle of the remaining cream. Slice and serve warm.
