Hearty Sausage & Tomato Omelet with Deli Ham

Instructions
Heat the butter or oil in a wide frying pan over medium heat until shimmering but not smoking.
Add the sliced sausage and cook, stirring occasionally, until lightly browned and partially cooked through, releasing its flavor into the pan.
Stir in the chopped onion and sauté for 2–3 minutes, until softened and fragrant. Add the tomatoes, season with salt and black pepper, and cook until the tomatoes release their juices and the mixture thickens slightly.
In a bowl, crack the eggs and beat lightly with a pinch of salt and pepper until just combined.
Lower the heat to medium-low and pour the beaten eggs evenly over the sausage and tomato mixture. Cover the pan and let the eggs set gently without stirring.
When the eggs are mostly set but still tender, gently fold and mix the omelet. Cook for another 1–2 minutes until just done. Remove from heat and serve warm.
