Prepare a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
Pat the beef fillets completely dry. Coat each fillet in flour, shaking off excess, then dip into the eggs and finish by pressing into the breadcrumbs until evenly coated.
Arrange the breaded fillets on a tray and refrigerate for 1 hour. This resting time helps the crust adhere during cooking.
Preheat the oven to 180°C (356°F).
Heat olive oil in a large skillet over medium heat. Season the fillets with salt and black pepper.
Pan-fry the fillets until golden brown on both sides and cooked through. Transfer them to an oven-safe baking dish.
Spoon tomato sauce over each fillet and gently rub the surface with a touch of garlic for added aroma.
Top generously with mozzarella and a sprinkle of Parmesan cheese.
