Juicy Homemade Chicken Burgers with Lemon & Herbs

Instructions
In a large mixing bowl, combine the ground chicken and finely grated onion. Mix gently until evenly distributed.
Add the lemon zest, lemon juice, dried herbs, salt, and black pepper. Knead the mixture for 2–3 minutes until cohesive and slightly sticky; this helps the patties hold together.
Cover the bowl or transfer the mixture to an airtight container and refrigerate for at least 4 hours to allow the flavors to develop and the texture to firm up.
Remove the mixture from the refrigerator and divide it into 6 equal portions. Shape each portion into a ball, then gently flatten into evenly sized patties.
Heat 2 tablespoons of the olive oil in a non-stick skillet over medium heat until hot but not smoking.
Place the patties in the pan, leaving space between them. Cook for 10–12 minutes per side, turning once, until fully cooked through and golden brown. Lightly brush the tops with the remaining oil before flipping for even browning.
Remove from the pan and rest for 2 minutes before serving to retain juiciness.
