Mediterranean Lime-Braised Okra Stew
"A zesty and aromatic plant-based delight that transforms humble okra into a sophisticated Mediterranean masterpiece with a bright citrus kick."
Instructions
Preheat the oven to 190°C (350°F). Lightly oil an oven-safe baking dish and set aside.
In a food processor, combine the chopped onion, grated garlic, green chili, red pepper flakes, cilantro, and water. Blend until smooth and aromatic.
Heat the vegetable oil in a small pan over medium heat. Add the sliced onion and sauté until soft, golden, and fragrant.
Reduce the heat and add the blended herb-onion mixture. Cook for about 2 minutes, stirring constantly, until the paste deepens in color and releases its aroma.
Gently fold in the chopped tomatoes, sliced okra, lime juice, salt, and black pepper, making sure everything is evenly coated.
Transfer the mixture to the prepared baking dish. Cover tightly and bake for about 15 minutes, or until the okra is tender and the flavors are well combined.
Remove from the oven, taste, and adjust seasoning if needed. Serve warm as a main dish or alongside rice or crusty bread.
