Microwave Sour Cherry Compote

Instructions
Place the pitted sour cherries in a deep, microwave-safe dish with a lid. Cover and microwave on high power (100%) for 3–4 minutes, until the cherries soften and begin releasing their juices.
Carefully remove the dish (it will be hot). Stir in the sugar, water, and lemon juice until evenly combined.
Return the dish to the microwave uncovered. Cook on high power for 5–6 minutes, stirring once halfway through, until the sugar is fully dissolved and a glossy, lightly thickened syrup forms.
Let the compote rest for 3–5 minutes; it will thicken slightly as it cools. Serve warm or allow to cool completely before transferring to an airtight container for storage.
