Mint-Garlic Pan-Seared Steak (Estik-e Na'na)

Instructions
Pat the beef completely dry with paper towels. If needed, lightly rinse first, then dry thoroughly to ensure proper browning.
Gently tenderize the steak with a meat mallet to promote even cooking.
In a small bowl, combine 1 tablespoon of the corn oil with the mustard, minced garlic, and black pepper. Rub this mixture evenly over both sides of the steak and let it rest for 5 minutes.
Heat the remaining corn oil in a frying pan over medium-high heat until shimmering.
Add the steak to the hot pan and sear until well browned, cooking to your preferred level of doneness, turning once.
Season with salt toward the end of cooking to retain the meat’s juiciness.
Transfer the steak to a serving plate. Garnish with fresh mint and serve warm alongside the cooked carrots.
