Oven-Roasted Persian Minced Meat Kebabs (Kabob Kardan Goosht Dar Far)

Instructions
In a large mixing bowl, combine the minced meat, finely grated onion, salt, black pepper, turmeric, and sumac. Using your hands, mix thoroughly until the mixture becomes sticky, cohesive, and evenly seasoned.
Divide the meat mixture into equal portions. Shape each portion firmly around metal skewers or form elongated kebab shapes, pressing gently to ensure they hold together without cracking.
Preheat the oven to 200°C (400°F). Line a baking tray with aluminum foil and lightly grease it with a little olive oil to prevent sticking.
Arrange the kebabs on the prepared tray, leaving slight space between them. Lightly brush the tops with the remaining olive oil to promote even browning.
Bake for 20–25 minutes, turning the kebabs once halfway through, until fully cooked, juicy inside, and golden brown on the outside.
Remove from the oven and let rest briefly. Serve hot with flatbread, fresh herbs, and sliced lemon for a traditional Persian presentation.
