Persian Fried Meat Bread (Nan Goshti) with Tamarind Sauce

Instructions
In a small bowl, mix the yeast with lukewarm water and sugar. Stir gently and let stand for 5–10 minutes, until foamy and activated.
In a large bowl, combine the egg, grated onion, vegetable oil, chickpea flour, white flour, ground meat, parsley, salt, pepper, and spices. Pour in the activated yeast mixture.
Stir thoroughly with a spoon until a smooth, slightly thick batter forms with no dry spots.
Cover the bowl and let the batter rest in a warm place for about 1 hour, or until it has doubled in volume.
Heat enough oil in a deep pan over medium heat until hot but not smoking.
Scoop tablespoon-sized portions of the batter and carefully drop them into the hot oil. Fry gently, turning occasionally, until puffed and golden brown on all sides.
Remove the breads and drain on paper towels. Keep warm while preparing the sauce.
For the sauce, combine tamarind water, vinegar, grated bell pepper, tomato paste, salt, and pepper in a small saucepan. Bring to a gentle boil, stirring well, and simmer for 2–3 minutes until slightly thickened.
Serve the hot meat breads immediately with the warm tamarind sauce on the side.
