Persian Jam-Filled Omelette (Omelet Moraba)

Instructions
Crack the eggs into a large bowl and whisk until light, frothy, and well blended.
Season with salt and black pepper. Stir in about half of the milk until fully incorporated.
Heat a nonstick skillet with high sides over medium heat. Add 3 tablespoons of the oil and allow it to heat until shimmering.
Pour half of the egg mixture into the pan, tilting the skillet to coat the surface evenly. Cover briefly and cook until the omelette is just set but still tender.
Using a spatula and fork, gently roll the omelette into a neat log and transfer to a plate.
Repeat with the remaining oil, egg mixture, and milk to make the second omelette.
Spread the jam evenly over each omelette, then roll again to enclose the filling. Serve warm.
