Persian Kolbas Omelette Stack

Instructions
In a small bowl, whisk the egg with salt and pepper until lightly frothy.
Stir in the cooked carrot, diced potato, pizza cheese, and chopped parsley until evenly combined.
Heat a small nonstick pan over medium heat and coat lightly with oil.
Place one slice of kolbas in the pan and warm it gently for about 30 seconds.
Pour the egg mixture evenly over the sausage slice, spreading it to the edges.
Carefully place the second slice of kolbas on top, pressing very lightly to level.
Cover the pan, reduce heat to low–medium, and cook until the egg is fully set and the cheese has melted, about 5–7 minutes.
Slide out of the pan, slice if desired, and serve warm.
