Persian Luqmeh Goushti Meat Morsels
"Experience the ultimate Persian finger food: golden, crispy flatbread parcels filled with a deeply aromatic and savory spiced meat center."
Instructions
Heat a large pan over medium heat. Add the ground meat, onion, and garlic. Cook, stirring frequently, until the onion is soft and golden and the meat is fully browned.
Season with salt, black pepper, turmeric, and cumin. Stir well to evenly coat the meat, then add the tomato paste. Cook for 2–3 minutes until the paste darkens slightly and melds with the spices.
Remove from heat and fold in the chopped parsley. Let the mixture cool slightly so it is easier to handle.
Heat the vegetable oil in a wide skillet over low to medium heat. Cut the flatbread or lavash into manageable pieces.
Place a spoonful of the meat mixture in the center of each bread piece. Roll or fold snugly to form small wrapped morsels.
Arrange the morsels seam-side down in the skillet. Fry gently, turning occasionally, until all sides are crisp and golden brown.
Transfer to a serving plate and serve warm, ideally with yogurt or your favorite dipping sauce.
