Persian Ratatouille with Eggplant and Ground Meat (Rataku)

Instructions
Pierce the eggplant several times with a fork. Place it on a metal trivet in the microwave and cook on high for about 7 minutes until softened. Let cool slightly, then peel and dice.
In a microwave-safe dish, combine the sliced onion and garlic with a small amount of cooking oil. Cook using the combination grill setting for about 5 minutes, until fragrant and lightly softened.
Add the ground meat, sliced mushrooms, diced eggplant, and zucchini to the dish. Cover and cook on high with the combination grill setting for about 7 minutes, stirring once if possible to ensure even cooking.
Stir in the sliced tomato and chopped parsley. Season with salt and black pepper to taste, then sprinkle the pizza cheese evenly over the top.
Cover again and cook using the combination grill setting for another 5 minutes, until the cheese is melted and the mixture is fully cooked. Serve hot.
