Crack the eggs into a blender, add the milk, and blend briefly until the mixture is smooth and lightly frothy. This step helps create a tender, airy omelette.
Pour the egg mixture into a bowl and gently stir in the sliced sausage or bologna, chopped green onions, salt, and black pepper until evenly combined.
Heat the olive oil in a nonstick frying pan over medium heat until it shimmers but does not smoke.
Pour the egg mixture into the pan and allow it to cook undisturbed for a few minutes, until the bottom begins to set while the top remains slightly soft.
