Persian Spinach with Sesame and Garlic (Khorak Esfanaj va Konjed)

Instructions
Heat 2 tablespoons of the sesame oil in a wide pan over medium heat.
Add the minced garlic and sauté for about 1 minute, stirring constantly, until fragrant but not browned.
Add the chopped spinach to the pan. Toss gently and cook until the spinach wilts and becomes tender, releasing its moisture.
In a small bowl, mix the sugar and soy sauce until the sugar is fully dissolved.
Pour the soy sauce mixture over the spinach and stir well. Let it simmer for 2–3 minutes so the flavors meld and lightly glaze the greens.
Drizzle in the remaining sesame oil and gently mix to coat the spinach evenly.
Sprinkle sesame seeds over the dish, adjust salt if needed, and serve warm.
