Persian-Style Marinated Mushrooms (Marinit Gharch)

Instructions
In a small saucepan, combine the vinegar, chopped garlic, bay leaf, and finely sliced onion. Place over low heat and simmer gently until the onion is soft and fragrant.
Add the olive oil and tomato puree to the pan. Season with salt and black pepper, then stir well and cook for 2–3 minutes until the marinade is smooth and well combined.
Arrange the fresh button mushrooms in a heatproof bowl. Pour the warm marinade over the mushrooms and gently toss until evenly coated.
Cover the bowl and refrigerate overnight, allowing the mushrooms to fully absorb the marinade and develop flavor.
Before serving, remove and discard the bay leaf and garlic pieces. Finish with fresh coriander and a light squeeze of lemon juice if desired. Serve chilled.
