Persian-Style Rolled Meatloaf (Roulade Gooshti)

Instructions
Preheat the oven to 150°C (302°F). Lightly grease a rectangular baking dish and set aside.
In a large mixing bowl, combine the breadcrumbs, milk, eggs, baking powder, salt, and bloomed saffron. Whisk until smooth and evenly blended.
Add the ground meat to the mixture and gently fold until just combined. Avoid overmixing to keep the meatloaf tender.
Stir in the chopped parsley, barberries, and tomato paste, ensuring even distribution throughout the mixture.
Transfer the meat mixture into the prepared baking dish. Press lightly to form an even, compact layer with a smooth surface.
Bake uncovered for about 60 minutes, until the top is lightly golden and the meat is fully cooked through.
Remove from the oven and let rest for 10 minutes to allow the juices to settle. Carefully invert onto a serving platter, slice, and serve warm.
