Persian-Style Sausage Omelet (Omelet-e Kalbas)

Instructions
In a small bowl, whisk the egg until smooth. Add the cooked carrot, potato, mozzarella cheese, parsley, salt, and black pepper, and mix until evenly combined.
Heat a small non-stick skillet over medium heat and lightly grease it with oil or butter.
Place one slice of sausage in the pan and let it warm for about 30 seconds.
Pour the egg mixture evenly over the sausage slice, spreading gently if needed.
Place the second slice of sausage on top of the egg mixture.
Cover the pan with a lid, reduce the heat to low–medium, and cook until the omelet is fully set and the cheese has melted, about 5–7 minutes.
Carefully remove the omelet from the pan, slice if desired, and serve warm.
