Persian-Style Seafood Pizza with Shrimp and Kilka
"Experience a bold Caspian twist on a classic favorite, featuring the deep umami of Kilka fish and succulent shrimp atop a handmade herb-infused crust."
Instructions
In a mixing bowl, whisk together the flour, baking powder, and salt. Add the milk and vegetable oil, mixing until a soft dough forms.
Knead the dough briefly on a lightly floured surface until smooth and elastic. Adjust with a little flour or milk if needed. Cover and let the dough rest for 30 minutes to relax the gluten.
To prepare the sauce, combine the tomato purée, tomato paste, crushed garlic, oregano, and parsley in a small saucepan. Cook over low heat, stirring occasionally, until slightly thickened and aromatic. Season with salt and black pepper, then set aside to cool.
Preheat the oven to 200°C (390°F) about 20 minutes before baking.
Roll out the rested dough into a 30 cm (12-inch) round and place it in a lightly greased baking pan or pizza tray.
Spread a thin, even layer of the cooled tomato sauce over the dough. Evenly distribute the shrimp, olives, grated cheese, and kilka fish on top.
Bake in the preheated oven for 15–20 minutes, or until the crust is fully cooked and the cheese is melted and lightly golden. Remove from the oven, slice, and serve hot.
