Persian-Style Spinach Omelette with Cheddar

Instructions
Heat 1 tablespoon of olive oil in a nonstick skillet over medium heat. Add the chopped onion and whole garlic cloves; sauté until the onion is soft and lightly golden. Remove and discard the garlic, then transfer the onions to a bowl.
In a mixing bowl, beat the eggs until smooth. Season with salt and black pepper.
Add the grated cheddar, chopped spinach, torn bread pieces, sautéed onions, tomato paste, and dried thyme to the eggs. Fold gently until evenly combined.
Wipe the skillet clean, add the remaining olive oil, and warm it over low heat.
Pour the egg mixture into the pan and cook gently, without stirring, until the bottom is set and lightly golden.
To finish the top, place the pan briefly under a hot grill or broiler until the surface is just set and lightly browned. Serve warm.
