Persian-Style Tuna Noodles (Tah-Mahi ba Reshteh)

Instructions
Bring a large pot of well-salted water to a boil. Cook the noodles according to package instructions until al dente, then drain and set aside.
Heat the olive oil in a wide pan over medium heat. Add the chopped onion and sauté for 5–7 minutes, stirring occasionally, until soft and lightly golden.
Add the minced garlic and turmeric to the onions. Stir continuously for about 30 seconds, just until fragrant.
Gently flake the tuna and add it to the pan. Stir carefully to warm it through while keeping some texture.
Season with salt and freshly ground black pepper to taste.
Add the cooked noodles to the pan and toss gently until the noodles are evenly coated and heated through.
Remove from heat, drizzle with fresh lemon juice, and taste to adjust seasoning.
Serve warm, garnished with chopped fresh parsley.
