Persian Sweet Baked Omelet (Omelet-e Shirin)
"Experience an ethereal fusion of delicate soufflé and golden Persian custard that transforms simple pantry staples into a royal morning treat."
Instructions
Preheat the oven to 180°C / 356°F. Lightly grease a shallow ovenproof baking dish large enough to hold the mixture in an even layer.
In a small saucepan, combine the milk, sugar, and vanilla. Heat over low heat, stirring occasionally, until the sugar fully dissolves and the mixture just begins to simmer. Remove from heat and allow it to cool slightly.
Crack the eggs into a large mixing bowl. Using an electric mixer, beat the eggs until pale, thick, and noticeably fluffy, incorporating air for a light final texture.
Slowly pour the warm milk mixture into the beaten eggs, stirring gently and continuously to prevent curdling and maintain an airy consistency.
Pour the mixture into the prepared baking dish and place it on the middle rack of the oven.
Bake for 40–45 minutes, or until the omelet is fully set and the surface develops a light golden color.
Remove from the oven and allow to cool slightly. Serve warm or at room temperature, sliced directly from the baking dish.
