Quick Microwave Mushroom & Onion Omelette

Instructions
Finely chop the onion and slice the mushrooms. Place them in a microwave-safe dish large enough to hold the omelette mixture.
Add the butter and oil, tossing lightly to coat the vegetables evenly.
Microwave uncovered on full power for 5 minutes, stirring once halfway through, until the mushrooms are tender and the onion is soft.
In a separate bowl, beat the eggs with salt and black pepper until well combined.
Pour the beaten eggs over the hot mushroom and onion mixture, spreading evenly.
Cover loosely or leave the lid slightly ajar to allow steam to escape. Microwave on full power for 3–4 minutes, until the eggs are just set but still tender.
Let the omelette rest for 1 minute before serving so it can finish setting. Serve warm.
