Rustic Mushroom & Bell Pepper Pizza

Instructions
Preheat the oven to 350°F (175°C). Lightly grease a pizza pan with a little vegetable oil and stretch the pizza dough evenly over the pan.
Spread the pizza sauce evenly over the dough. Drizzle 1 tablespoon of the vegetable oil over the sauce to keep the crust moist and flavorful.
Prepare the vegetables: slice the mushrooms, chop the bell pepper, dice the tomatoes, and finely chop the onion.
Evenly distribute the onion, bell pepper, tomatoes, and mushrooms over the sauced dough.
Season lightly with salt and black pepper, then sprinkle the oregano or Persian thyme evenly over the vegetables.
Bake for 18–22 minutes, until the crust begins to set and the vegetables soften.
Remove the pizza from the oven, sprinkle the mozzarella evenly over the top, and return to the oven for about 5 minutes, until the cheese melts and turns lightly golden.
Remove from the oven, drizzle lightly with extra pizza sauce if desired, slice, and serve warm.
