Place the chicken breasts in a shallow dish. Add a small splash of vinegar, lemon juice, and salt, turning the chicken to coat evenly. Cover and marinate in the refrigerator for about 2 hours to tenderize and lightly flavor the meat.

Remove the chicken from the marinade. Using a sharp knife, carefully cut a lengthwise pocket into each breast, taking care not to slice all the way through.

In a bowl, combine the cubed mozzarella, grated onion, chopped parsley, salt, and black pepper. Mix until evenly blended.

Stuff the cheese mixture evenly into the pockets of the chicken breasts, pressing gently so the filling stays inside.

Lightly grease a baking dish with olive oil. Arrange the stuffed chicken breasts in the dish, brush the tops lightly with olive oil, and drizzle the dissolved saffron over them for color and aroma.
